Libera’s mattarello is a versatile mozzarella, purposely created to make not only a series of baked dishes such as panzerotti, pizza but also a fresh caprese salad.
Its compact and dry texture retains all the fresh and rich flavour of milk without releasing too much water during cooking. It has the traditional cylindrical shape of the pizza mozzarella, so it can be easily sliced or cubed in order to reach every corner of your baking tray.
