Dairy products are very important in the Mediterranean diet, because they have a high content in calcium, phosphorous, potassium, high biological value proteins and vitamins.
Nonetheless, milk and its derivates are less and less tolerated by people, in Italy only, people intolerant to lactose are 50% of the population.
In fact, as years go by, our body naturally reduces its ability to digest lactose. As a consequence, the first symptoms appear such as bloating and cramps.
This is why Libera produces mozzarellas, scamorzas, cheese and butter all lactose free. They are highly digestible. Our production methods have been studied to protect the delicate flavour and the nutritional values of milk.

WHAT IS LACTOSE?
Lactose is a complex sugar made up of two simple sugars, glucose and galactose, which is produced naturally by the mammal glands of mammals.
WHAT IS LACTOSE INTOLERANCE?
Intolerance is the inability of our body to completely digest lactose. This is due to an insufficient production of the lactase enzyme, which is responsible for lactose digestion.
WHAT ARE THE SYMPTOMS?
Symptoms appear immediately after having ingested a product with lactose and include bloating, abdominal tension, cramps, tympanites, nausea and diarrhoea.
